A 10 year old rum from the Don Papa range, inspired by the story of Papa Isio, who played a big part in the late-19th century Philippine revolution. It's produced on an island in the Philippines, which is said to have one of the highest rates of 'Angel's Share' evaporation in the world - making this 10 year old expression (aged in re-charred American oak barrels) all the more impressive.

Ingredients:

4 parts Don Papa Rum

1 part fresh lime juice

Ginger Beer

Mint

Method: In a highball glass filled with ice, squeeze the juice of half a lime. Charge with Don Papa Rum and top with a spicy ginger beer. Stir with a cocktail spoon and add a mint leaf sprig to garnish.
